This beef is absolutely melt-in-your-mouth and so easy. Scrumptious on those cold winter nights. Even better with gravy and gorgeous muffin size Yorkshire puds. - amandacr
Ingredients

3 kg beef roast
-
2 onion sliced
-
6 garlic clove
-
2 tsp cornflour
-
2 tbs water
Method

Place sliced onions in the bottom of the slow cooker.

Peel the garlic cloves and squash slightly, add with the onions to the slow cooker.

Add beef onto the bed onion, turn the cooker onto low and cook for 7-8 hours (depending on the size of your beef). There is no need to add any liquid as the beef produces the liquid during cooking.

When beef is cooked, remove from the slow cooker and place on a warm plate, cover with foil and allow to rest while making the gravy.

Remove garlic cloves and pour the liquid from the slow cooker into a saucepan.

Combine cornflour and small amount of water in a cup and mix to a smooth but thick paste, add to the heated beef liquid and whisk constantly but not too fast.

Carve the beef and serve with roast vegetables, Yorkshire puddings and gravy.
